Crock Pot Lemon Basil Chicken
1 package of boneless, skinless chicken breasts
1 lb. carrots, peeled and cut into 1 inch chunks
1 c. chicken broth
juice of 2 lemons
1 t. dried basil
lemon pepper
salt, optional
Place carrots on bottom of crock pot. Place chicken on top of carrots. Sprinkle generously with lemon pepper. In small bowl, mix together broth, lemon juice and basil. Pour into crock pot. Turn crock pot on high for 3-4 hours.

Crock Pot Roast
2-3 lb. Roast
6 carrots, cut into large pieces
1 onion, cut into large chunks
1 can of cream of mushroom soup
1 can of golden mushroom soup
1 packet dry onion soup mix
2 c. water
Place all items in crock pot. Cook on low for 8 hours. Serve with mashed potatoes.

Beef Stew for the slow cooker
Now that October is here, I feel like it's actually fall and I can break out the soup and stew recipes.
2 T. flour
2 t. salt
1 t. pepper
3 5.5-oz. cans tomato juice
2 lb.beef stew meat
16-oz. sliced mushrooms
6 carrots, cut into thick slices
1/2 pound fresh green beans, trimmed
1 large onion, chopped
2t. minced garlic
Combine 2 T. flour, salt and pepper in bowl. Gradually whisk in tomato soup. Combine stew meat, mushrooms, carrots,green beans, onions and garlic to slow cooker. Add tomato juice mixture. Cook on high 6 hours until beef is tender.

Crock Pot Cider
Warm apple cider is just so delicious. I love it in the fall and for holidays. It also makes your house smell so delightful. Here is a perfect way to serve it warm.
1 gallon of apple cider
1/4 t. ground cloves
1/2 t. allspice
6 cinnamon sticks
Pour cider into crock pot. Add in spices. Heat at least 1 hour on high before serving.

Crock Pot Macaroni and Cheese
Crock Pot Mac and Cheese
Cooking oil spray
2 cups skim milk
1 (12 oz.) can evaporated milk
1 can cream of mushroom soup
1 egg
1 tsp salt
1/4 tsp. pepper
1 1/2 cups Shredded cheddar cheese
2 cups uncooked elbow macaroni
Spray the pot of the slow cooker. In a mixing bowl whisk together milk, evaporated milk, soup, egg, salt
and pepper. Pour milk mixture into the crockpot. Add cheese and
uncooked macaroni. Stir gently to mix.
Turn slow cooker on low and cook about 3 hours, or until the custard is set
and the macaroni is tender.

Chicken Taco Meat
Our new favorite way to do tacos - crock pot!
1 package of boneless, skinless chicken breast
1 package of taco seasoning
1 c. chicken broth
1 onion, sliced
2 jalapenos, seeded and chopped
1 t. minced garlic
Place everything in the crockpot. Cook on high for about 4 hours. Great for tacos, burritos, nachos, you get the picture!!

Cheesy Ham and Potatoes (CrockPot)
Cheesy Ham and Potatoes
1 32-oz bag frozen, shredded hash brown potatoes
8 oz sour cream
1 can cream of chicken soup
1 can cream of mushroom soup
1/2 cup butter, melted
1 small onion, chopped fine
1/2 green bell pepper, diced
2 c. diced ham
1/2 c. grated parmesan cheese
black pepper to taste
1 cup shredded cheddar cheese
Crockpot Directions:
Coat the inside of a crockpot with cooking spray or butter. Spoon the potato mixture into the crockpot. Cover, and cook on High for 1 1/2 hours, then reduce heat to Low, and cook for an additional 2 1/2 hours.

Chicken Risotto for the Crock Pot
Really Good!
Chicken Risotto
1 1/4 cups brown rice
1 can cream of mushroom soup
1 can cream of chicken soup
1 can of chicken broth
Spray crockpot with non-stick cooking spray. In a bowl combine soups and butter. Place rice in crock pot and pour 1/2 soup mixture to cover. Place chicken in next. Pour remaining soup over chicken. Top with almonds and cheese. Cook on low 6-8 hours.

crock pot dressing
We're getting ready for Thanksgiving early! I will post several Thanksgiving recipes over the next few days so check back often if you need some ideas.
In large mixing bowl, add chicken, cornbread, bread, eggs, seasonings and cream of chicken soup. Add in sauteed veggies. Add 1 can of chicken broth and stir well. Add chicken broth from 2nd can to get desired moistness.
Place in crock pot. Cook on high for 1 hour, then Cook on low for 3-4 hours to get done.
Notes: I save the ends of my bread and bread that is getting older in the freezer. I cube it when I know it's getting older and toss it in a bread bag to save for either bread crumbs or a dish like this since we go through lots of sandwich bread at our house. A couple of weeks later i will have a full bag. Just a tip if you throw out lots of bread for another use for it.
- 4 T. butter
- 1 onion, chopped
- 6 stalks of celery, chopped
- 3 skinless, boneless chicken breasts, cooked and diced
- 1 (9x9 inch) pan cornbread, cooled and crumbled (I just made an "instant" package)
- 1/2 loaf of bread cubed (See note below)
- 4 eggs, beaten
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 2 (10.75 ounce) cans condensed cream of chicken soup
- 2 (14.5 ounce) cans chicken broth (You won’t use all of it)

Crock Pot Beef Stroganoff
Why oh Why don't I use the crock pot more????? Just dump everything in and turn it on. I mean seriously, I need to use it all the time!!! This is the only thing I've ever tried in the crock pot besides a roast. I'll be looking for some more recipes for it!!!
Beef Stroganoff
2lbs of Beef Tips ( I used stew meat, not sure if it's the same cut of meat, but worked well)
1 large onion, chopped
1 can cream of onion soup (Yes, Campbell's makes this - never heard of it before)
1 can golden mushroom soup
1 8oz jar of sliced mushrooms
1 tsp. ground black pepper
1 3oz. cream cheese
1 8oz. sour cream
8oz package of Egg Noodles, cooked
In Crock Pot, combine Beef Tips, onion, soups and pepper. Cook 8 hours (I did 3 on High, 5 on Low, but I think 8 on low would be sufficient). Add Cream Cheese and Sour Cream. Stir to combine. Serve over noodles. (I just dumped the cooked noodles in after the sour cream and cream cheese).
