Pumpkin Muffins

1 Yellow Cake Mix
1 15oz. can of Pumpkin puree


Preheat oven to350.  Line a muffin pan with wrappers.  Mix together cake mix and pumpkin puree.  Yes, that's all! Bake at 350 degrees for 20-25 minutes. Dust with powdered sugar or add a little glaze.  I made my glaze with a little powdered sugar, cinnamon and milk to make the desired consistency

Pumpkin Cake

Easy and Good

2 c. flour
2 c. sugar
1 t. baking powder
1 t. salt
1 t. cinnamon
dash of nutmeg
1 c. oil
4 eggs
2 c. canned pumpkin

Mix all and bake at 350 for 35 minutes.

After cake cools, frost with:
1 box powdered sugar
8 oz cream cheese
1 stick of butter
1 t. vanilla

Pumpkin Gooey Butter Cake

I recently had this dessert at a friend's house and decided it was a perfect fall dessert to include with dinner for 2 different friends who had babies recently. I split the recipe b/t 2 8x8 dishes and it was the perfect amount for each family. The large one would be good for a Thanksgiving treat!


Pumpkin Gooey Butter Cake

(adapted from Paula Deen)

1 package yellow cake mix
1 egg
1 stick of butter, melted
1 (8-ounce) package cream cheese, softened
1 (15-ounce) can pumpkin
3 eggs
1 t. vanilla
1 stick of butter, melted
1 (16-ounce) box powdered sugar
1 t. pumpkin pie spice

Directions

Preheat oven to 350 degrees F.
Combine the cake mix, egg, and butter and mix well with an electric mixer. Pat the mixture into the bottom of a lightly greased 9x13 pan ( I split the recipe and used 2 - 8x8 pans)
To make the filling: In a large bowl, beat the cream cheese and pumpkin until smooth. Add the eggs, vanilla, and butter, and beat together. Next, add the powdered sugar, spice, and mix well. Spread pumpkin mixture over cake batter and bake for 35 minutes (maybe more). Make sure not to overbake as the center should be a little gooey.

Pumpkin Bread

I made this yummy bread for Gracie's 2 super sweet teachers and 1 for Alan's office last Friday for a Halloween Treat. It would be great for Thanksgiving as well. This recipe will make 3 loaves.

Pumpkin Bread (adapted from allrecipes.com)

3 c. canned pumpkin
1 1/2 c. vegetable oil
4 c. sugar
6 eggs
4 3/4 c. all purpose flour
1 1/2 t. baking powder
1 1/2 t. baking soda
1 1/2 t. salt
2 t. pumpkin pie spice

Preheat oven to 350. Grease and flour 3 9x5 loaf pans.
Mix pumpkin, oil, sugar and eggs in a large bowl. In a seperate bowl, combine dry ingredients and add into the pumpkin mix. Divide evenly between the 3 pans. Bake 45-60 minutes. Cool. Lightly dust with powdered sugar if desired.

Pumpkin Pancakes

A yummy fall breakfast. Gracie told me "these are the best flapjacks I ever had!"

1 1/2 c. dry pancake mix (mine was just add water kind)
1/2 c. pumpkin puree (I use Libby's canned pumpkin)
1 t. pumpkin pie spice
1 c. water

Mix all with a whisk until combined may need more or less water. Make pancakes as you would. I did notice these took a little longer to cook than regular ones. Very good!

Pumpkin Apple Muffins

Super Delish! From Taste of Home Halloween Magazine.

2 1/2 c. flour
2 c. sugar
1 T. pumpkin pie spice
1 t. baking soda
1/2 t. salt
2 eggs, lightly beaten
1 c. canned pumpkin
1/2 c. vegetable oil
2 c. finely chopped peeled apples

Topping:
1/2 c. brown sugar
4 T. flour
1/2 t. cinnamon
2 T. softened butter

In a large bowl, combine 1st 5 ingredients. Combine eggs, pumpkin and oil; stir into dry ingredients just until moistened. Fold in apples. Fill greased muffin cups 3/4 full.

For topping: combine sugar, flour and cinnamon. Cut in butter until mixture resembles coarse crumbs. Sprinkle 1 tsp on each muffin.

Bake at 350 for 25-30 minutes or until muffins test done.

Yield: 18 muffins.


P.S. My oven is fixed!!! Who knew it only needed a $29.00 part! Lots of new recipes coming. I have 3 more to try this week.
