Pumpkin Bread

I made this yummy bread for Gracie's 2 super sweet teachers and 1 for Alan's office last Friday for a Halloween Treat. It would be great for Thanksgiving as well. This recipe will make 3 loaves.

Pumpkin Bread (adapted from allrecipes.com)

3 c. canned pumpkin
1 1/2 c. vegetable oil
4 c. sugar
6 eggs
4 3/4 c. all purpose flour
1 1/2 t. baking powder
1 1/2 t. baking soda
1 1/2 t. salt
2 t. pumpkin pie spice

Preheat oven to 350. Grease and flour 3 9x5 loaf pans.
Mix pumpkin, oil, sugar and eggs in a large bowl. In a seperate bowl, combine dry ingredients and add into the pumpkin mix. Divide evenly between the 3 pans. Bake 45-60 minutes. Cool. Lightly dust with powdered sugar if desired.
