Alice Springs Chicken

Don't you love this dish.  We don't have this restaurant in our town, but every couple of years, I get to one and it never disappoints. I love it!  I consider this dish to be a very good copy of it.

1/2 c. dijon mustard
1/2 c. honey
1 1/2 t. olive oil
1/2 t. lemon juice
6 boneless skinless chicken breasts
salt and pepper
1T. oliveoil
16-oz. sliced mushrooms
2 T. butter
1 c. shredded Monterey Jack cheese
1 c. shredded cheddar cheese
6 bacon strips cut in half, partially cooked
chopped fresh parsley

Combine dijon, honey,olive oil and lemon juice. Pour half into large ziploc bag. Add chicken.  Seal bag and marinate 2 hours.

In large skillet over medium heat, brown chicken on all sides in 1 T. olive oil. Sprinkle with salt and pepper and place in 9x13 baking dish.

In same skillet, add 2 T. butter and saute mushrooms until tender.

Spoon remaining marinade over chicken.  Add Mushrooms over each piece. Add 2 pieces of  bacon to each chicken.  Top with cheeses.  Bake at 375 for 25 minutes. Top with fresh parsley.
