Banana Nut Muffins with Streusel

These were so yummy.  I put them in the cute "cupcake/muffin" cups. They are lined and you don't have use a muffin pan - these will stand up on a regular cookie sheet.  Makes breakfast a little more fun and fancy for my girls!  These made about 18 muffins this way -not quite mini but not large ones either.  May only make 12 larger muffins.

1 1/2 c. flour
1 t. baking soda
1 t. baking powder
1/2 t. salt
3/4 t. cinnamon
3 bananas, mashed
1/2 c. sugar
1/4 c. brown sugar
1 egg, beaten
1/3 c. oil
1 t. vanilla
1/2 c. chopped pecans

Streusel Topping
1/3 c. brown sugar
2T. flour
1/4 t. cinnamon
2T. butter
Combine all until crumbs form.

Preheat oven to 375.  Prep your favorite muffin pan/ muffin cups, etc and set aside.

In large mixing bowl, combine all ingredients and stir just until combined.  Pour into prepped muffin cups.   Sprinkle with struesel topping.   Bake 17-20 minutes or until done.  Insert toothpick to check for doneness if needed. Store in airtight container.
