Taco Mac

1 16-oz. package of shell macaroni
1 lb. ground beef
1 onion, finely diced
1 T. minced garlic
1 packet of low sodium taco seasoning
1 c. salsa
1 can of diced tomatoes, drained
1 8-oz. cream cheese
2 c. milk
1/2 c. sour cream
2 c. shredded mexican cheese

Cook shell macaroni according to package directions, drain and put into large serving bowl.

In 4 quart sauce pan, brown ground beef with onions over medium heat.  When meat is almost done, add in garlic and finish browning meat.  Drain off any fat and add taco seasoning, salsa and diced tomatoes. Stir together and cook for 1-2 minutes.  Add in cream cheese, milk and sour cream.  Stir until cream cheese is melted and mixture has thickened slightly.  Add in Mexican Cheese and stir until melted.  Remove from heat and pour mixture over the cooked shells.  Toss gently to combine and serve immediately.
