Yes, tomato pie. It's some kind of delicious I can't even begin to explain. I know the words tomato and ,pie do not go together but it works and it works well! There are tons of versions out there, but this is the one that I love.
Tomato Pie
1 prebaked pie shell
4 tomatoes, seeded and diced
1/2 of vidalia onion, diced
1 T. brown sugar
salt and pepper
6 fresh basil leaves, cut into ribbons
3/4 c. shredded cheddar
3/4 c. shredded mozzerella
3/4 c. mayo (do yourself a favor and go ahead and use the real stuff - you need it)
Preheat oven to 350.
In a small bowl, combine tomatoes, onion, brown sugar, salt and pepper. Let set for 30 minutes or so. After it sits for awhile, drain off any liquid and add the basil. Stir to combine. Put into baked pie shell.
In another bowl, combine cheeses and mayo. Spread over tomatoes in pie crust.
Bake pie for 20 minutes or so. Topping should be melted and bubbly. Let set for 5 minutes. Serve warm!
