Bread Pudding with Chocolate Chunks with White chocolate Sauce
adapted from Betty Sims
1 loaf of bakery white bread unsliced cut into cubes (I bought bread from Publix bakery Dept.)
3 1/2 c. milk (i used reduced fat)
1 c. half and half
4 eggs
1 c. sugar
2 T. butter, melted
1 t. vanilla
1/8 t. salt
1 c. semi sweet chocolate chunks
Take bread and put in large mixing bowl. Pour milk and half and half over it and let set 10 minutes. Stir it up to make sure all the bread is covered.
Combine eggs, sugar, butter, vanilla, salt. Pour into bread mix and stir to combine. Add in chocolate chips. Pour mixture into greased 9x13 dish. Bake at 325* for 1 hour or until firm and lightly browned.
Serve warm with Sauce.
Sauce:
1/2 c. sugar
1 stick of butter
1/2 c. of half and half
1 4oz. white chocolate baking bar ( i used ghiradelli in the chocolate chip section of my grocery store)
1 T. Vanilla
Combine sugar, butter and half and half in a small saucepan over medium heat. Stir with a whisk until combined. About 5 minutes. Remove from heat. Add white chocolate and vanilla and stir until well combined and white chocolate is melted.
