Chicken Baked Potatoes

Our copycat attempt at McAlister's Chicken Potato...a really good copy cat attempt.

4 Baked Potatoes
1 package of chicken tenderloins
8oz. Swiss Cheese Shredded
1/2 bunch of green onions, thinly sliced
1 Roma tomato, diced

Bake potatoes...I usually do mine at 400* for an hour or so depending on your potato size. While the potatoes are baking, Saute the chicken in a little olive oil and whatever seasonings you prefer. Chop the chicken.
After potatoes are done, slice lengthwise. Divide Chicken evenly b/t the potatoes. Top with Swiss cheese. Put back in the oven and heat until the cheese melts. Remove from oven and top with the chopped green onions and Roma tomatoes.

Top with Ranch dressing.

We make this as 4 servings, but if you have ever been to McAlister's you will know that this is 1/2 of what they serve you! You could easily combine the potatoes for a huge one like they do.
