Stuffed Jalapenos

Jalapenos are aplenty on our pepper plants right now so we made some delicious stuffed jalapenos for dinner last night to go with our beers on the patio.


12 jalapenos sliced lengthwise, seeds and tops removed
8oz. light cream cheese, softened
1/2 c. shredded cheddar cheese
1t. minced garlic
12 Lil smokies, smoked sausages, sliced in half lengthwise
8 slices of bacon, cut into thirds

Preheat grill to 250 degrees (we use a big green egg).

Take jalapenos and slice in half lengthwise.  Remove the stems and scoop out the seeds - leaving jalapeno "boats". Set aside.  In a small mixing bowl, combine cheeses and garlic.  Fill jalapenos with cheese mixture, add the lil smokie on top of cheese mixture. Top each pepper with a piece of bacon.  Place peppers on grill pan. Smoke over low heat until bacon is cooked and crispy about 45 minutes.
