Patrioric Fruit Cookie Pizza


Summer desserts taste better when they are light and made with fresh fruit! This one is especially good for the 4th of July. It also is ready fast, so its easy to throw together for those impromptu summer BBQs.

Cookie Cake
2/3 c. sugar
2 sticks of butter
1 egg
2 1/2 c. flour
1t. Vanilla

Preheat oven to 350.
In mixing bowl, cream together butter and sugar. When light and fluffy, add egg. Mix until incorporated. Add flour and vanilla. Mix until dough forms. Press dough into 12 inch pizza pan. Bake at 350 for 12-15 minutes until done but not browned. Let cool completely.

Topping
1 8-oz. package cream cheese, softened
2/3 c. powdered sugar
Mix all and spread evenly over cookie.

Top with strawberries and blueberries.
