Banana Nut Muffins

These muffins are great for using leftover bananas.  I have one child that goes on a banana kick and eats them day after day and then all of the sudden she's done.  It's always right after I have bought a new bunch of them - go figure.  I HATE bananas just peeled and eaten - blah.  But I do like banana bread and muffins.  If you have any ripe bananas and can't use them right away - you can freeze them.  I used frozen ones for this last batch and could not tell a difference.  

1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt 
1/2 teaspoon ground cinnamon
3 bananas, mashed
1/2 cup white sugar
1/4 cup brown sugar
1 egg, 
1/3 cup oil

Preheat the oven to 375˚F. Line a standard muffin pan with paper cups. In a large bowl, mix together the 1 1/2 cups flour, baking soda, baking powder, salt, and 1/2 teaspoon cinnamon, bananas, white sugar, 1/4 cup brown sugar, egg, oil, and vanilla. Stir until just moistened - don't overmix. Spoon the batter into the lined muffin cups.  Bake 15-18 minutes.  This made 12 large and 12 mini for me.

Cheddar Pecan Quiche

Crust:
1 c. flour
1 c. shredded cheddar
3/4 c. chopped pecans
1/2 t. salt
1/4 t. paprika
1/3 c. vegetable oil

Combine 1st 5 ingredients.  Mix well and add oil.  Press dough into a 9 inch pie plate.  Bake at 350 for 12 minutes.

Filling:
1 c. sour cream
1/2 c.chicken broth
1/4 c. mayo
3 eggs
2 c. cooked chicken
1/2 c.shredded cheddar
1/4 c. finely diced onion
2-3 dashes of hot sauce

Pecan Halves

Mix all but pecans. Pour over crust.  Arrange Pecan Halves over chicken mixture around the edge of the crust.  Bake at 350 for 55 minutes.

Honeybun Cake

This is a great cake for the holidays - it works for dessert, brunch, breakfasts.  This takes little effort to make a homemade cake for all ages to enjoy.

1 yellow cake mix
3/4 c. oil
4 eggs
8 oz. sour cream

Stir by hand until lumps are out.  Pour half of the batter into and lightly greased 9x13 dish.

Combine 1 c. brown sugar and 1 T. cinnamon and sprinkle over batter layer in dish. Pour remaining cake batter over the top.  Bake at 325 for 35-40 minutes.  When cake is still warm- glaze with icing.

Icing 2 c. powdered sugar, 4 T. milk, 1 T. vanilla. Whisk and evenly pour over cake.

Sour Cream Apple Coffee Cake

1 yellow cake mix
Large box of instant vanilla pudding mix
4 eggs
1 c. sour cream
1/2 c. oil
1/2 c. sugar
2 t. cinnamon
4-6 Golden Delicious Apples, pared and sliced

Combine cake mix, pudding, eggs, sour cream and oil in a mixing bowl; beat with mixer on high speed for 5 minutes.  Meanwhile, combine cinnamon and sugar and set aside

Pour half the cake batter into a greased and floured 9x13 pan. Sprinkle with half the cinnamon sugar mix.  Arrange 1/2 the sliced apples flat in rows.  Cover with remaining batter and repeat steps.  Bake 350 for 1 hour.

Apple Bran Muffins

1 c. All Bran cereal
3/4 c. milk
1/4 c. shortening
1 egg
1 c. finely chopped apple
1/4 c. sugar
1 t. cinnamon
3/4 c. plus 2 T. flour
2 1/2 t. baking powder
1 t. salt

Combine cereal and milk.  Allow to stand until milk is absorbed. Stir and thoroughly combine with bran-milk mixture, shortening,egg, apple sugar and cinnamon. Mix dry ingredients together add to mixture. Stir only until all ingredients are just blended.  Fill greased muffin pans 2/3 full.  Bake at 400 for 30 minutes.

French Toast Casserole

Prep the night before and bake when you get up in the morning.

French Toast Casserole
1/2 c. butter, melted
12 slices of white bread
1 c. brown sugar
2 t. ground cinnamon
5 eggs, beaten
1 1/2 c. milk

Melt butter. Place 1/4 c. in bottom of 9x13 pan. Place 6 slices of bread on the bottom of the dish. Sprinkle with 1/2 brown sugar and cinnamon mix. Top with remaining 6 slices of bread. Pour remaining butter over top of bread. Mix eggs and milk together and pour over entire casserole. Bake at 350 for 30 minutes.

Egg Casserole

This is a family favorite for as long as I can remember.

Egg Casserole

1 lb. ground sausage, cooked and drained
3 slices of bread torn into cubes
6 eggs, beaten
2 c. milk
1 c. cheese
1/4 t. salt
1/4 t. pepper
1/4 t. ground mustard

Mix all and place in 8x8 or 2 qt. casserole dish. Bake at 350 for 45 minutes.

Pumpkin Muffins

1 Yellow Cake Mix
1 15oz. can of Pumpkin puree


Preheat oven to350.  Line a muffin pan with wrappers.  Mix together cake mix and pumpkin puree.  Yes, that's all! Bake at 350 degrees for 20-25 minutes. Dust with powdered sugar or add a little glaze.  I made my glaze with a little powdered sugar, cinnamon and milk to make the desired consistency

Blueberry Streusel Muffins

Each summer we pick delicious blueberries and I stock my freezer to have for things like these homemade Blueberry Muffins. I also kept some of these muffins in the freezer.


3 c. flour
1 c. sugar
3 t. baking powder
1 t. baking soda
1/4 t. salt
3/4 c. milk
3/4 c. sour cream
1/2 c. butter, melted
2 eggs, lightly beaten
1 1/2 c. fresh or frozen blueberries
Streusel Topping


Preheat oven to 350. Line 18 muffin cups with paper liners and set aside.

In a mixing bowl, combine flour, sugar, baking powder, baking soda and salt. In a small bowl, mix the milk, sour cream, butter and eggs. Add to flour mixture; stirring until just combined. Fold in blueberries.

Divide batter among pans. Sprinkle with topping and bake for 18 or so minutes.

Streusel Topping
3/4 c. brown sugar
1/3 c. flour
1 t. cinnamon
3 T. butter, slightly softened

Add all ingredients to a bowl. Mix well with a pastry blender until mixture is crumbly.

Sausage Cheese Grits Casserole

Since we were doing this for "Breakfast for dinner, we added some garlic and peppers. You might want to omit for breakfast.

4 c. water
1/2 t. salt
1 c. quick cooking grits
2 c. shredded cheese
1/4 c. butter
4 eggs, lightly beaten
1/2 c. milk
1 garlic clove, minced
2 whole banana peppers, diced
1 lb. pork sausage, browned and drained.

Grease a 2qt. casserole dish and set aside. In saucepan, bring water and salt to a boil. Add grits, reduce heat to low , cook 5 minutes and stir occasionally.

Remove from heat and stir in 1 1/4 c. cheese and butter; stir until melted. Add eggs, milk, garlic, banana peppers and sausage; blend well. Pour mixture into dish. Sprinkle with remaining cheese
Bake at 350 for 45 min - 1 hour - I will try this in a 9x13 next time to see if I can get the cook time down. Mine would never really set up - still good.

Quiche Lorraine

I made this the other night for our dinner. I think quiches make good, inexpensive filling dinners.

1 9-inch pie crust

1 onion, chopped
2 T. butter
3 eggs, beaten
1 1/2 c. milk
1/4 t. salt
1/2 lb bacon, cooked and crumbled
8 oz. swiss cheese shredded


Preheat oven to 325.

In skillet, melt butter over medium high heat. Add onion and saute until tender; drain and set aside.

In a large bowl, mix eggs, milk and salt. Stir in bacon and onion. Add cheese; stir well. Pour mix into pie crust. Bake 35-40 minutes. Let cool 10 minutes before serving.

Pumpkin Pancakes

A yummy fall breakfast. Gracie told me "these are the best flapjacks I ever had!"

1 1/2 c. dry pancake mix (mine was just add water kind)
1/2 c. pumpkin puree (I use Libby's canned pumpkin)
1 t. pumpkin pie spice
1 c. water

Mix all with a whisk until combined may need more or less water. Make pancakes as you would. I did notice these took a little longer to cook than regular ones. Very good!

Broccoli Cheddar Quiche

(adapted from allrecipes.com)

2T. Butter
1 onion, finely diced
1 t. minced garlic
2 c. chopped frozen broccoli (I used florets and chopped myself to avoid lots of stems)
1 9inch unbaked pie crust
1 1/2 c. shredded cheddar
3 eggs, beaten
1 c. milk
1 t. salt
1/2 t. black pepper

Preheat oven to 350. Over medium-low heat melt butter in a large saucepan. Add onions, garlic and broccoli. Cook slowly, stirring occasionally until the vegetables are soft. Spoon vegetables into crust and sprinkle with cheese. Combine eggs and milk. Season with salt and pepper. Pour egg mixture over vegetables and cheese. Bake for about 45 minutes or until center is set.

Fruit Kabobs


Last week we had a little Junior League party and I made these cute fruit kabobs to go with our wine and cheese, but they would be great for a breakfast/brunch event as well.

I used cantaloupe, honey dew, red grapes, watermelon and strawberries. I used a melon baller for scooping out the melon and cut the tops off the berries. I put together in various patterns.

Blueberry Coffee Cake - 2 Ways

Blueberry Coffee Cake (From Magic by Junior League of Birmingham)
1 stick of butter, softened
1 c. of sugar
2 eggs
1 8oz. sour cream
1 t. vanilla
2 c. flour
1/2 t. baking powder
1/2 t. soda
1/4 t. salt
2 cups of fresh blueberries

Topping:
1/3 c. sugar
1/2 c. chopped pecans
3 t. cinnamon


Preheat oven to 350. Cream together butter and sugar. Add the eggs, beating at medium speed. Add Sour Cream and vanilla. Sift together the flour, powder, soda and salt. Add to the batter. Carefully fold in blueberries. Combine topping ingredients. Using a greased and floured Bundt pan, pour in half of the batter, spread half of the topping on this, and then add the rest of the batter. Spread on the remaining topping. Swirl with a knife. Bake for about 50 minutes.
This may be frozen.





Blueberry Crunch Ring (from Betty Sims Southern Scrumptious Entertains)
1/2
c. finely chopped walnuts ( I used pecans)
1/2 c. packed brown sugar
2 T. flour
2 t. cinnamon
2 T. butter, melted
1 1/2 c. flour
3/4 c. sugar
1 T. baking powder
1/2 t. salt
1/4 t. nutmeg
1/3 c. butter
1 c. blueberries
1 egg
1/2 c. milk
1 t. vanilla


Mix the walnuts, brown sugar, 2 T. flour, cinnamon, and 2T. melted butter in a bowl. Pat 1/2 of the streusel mix into the bottom of a greased and floured 9 inch tube pan. Combine 1 1/2 c. flour, sugar, baking powder, salt and nutmeg in a large bowl and mix well. Cut in 1/3 c. butter using a pastry blender until the mixture resembles coarse crumbs. Stir in blueberries gently. Blend the eggs, milk and vanilla in a small bowl. Add to the blueberry mix and stir just until combined. Spread half of the mixture over the streusel in the prepared pan. Layer with the remaining streusel mix and blueberry mix. Bake at 350 for 45-60 minutes or until cake tests done. Cool on wire rack for 20 minutes. Invert onto serving plate and dust with powdered sugar.

Mini Chocolate Chip Muffins

It's time for another Sunday morning muffin recipe. Muffins are quick and easy for us to grab on the way out the door on Sunday mornings to eat in the car. I know, you are wondering why they aren't blueberry, but we still had pie left and I thought I'd save blueberry muffins for another weekend.


Mini Chocolate Chip Muffins
2 c. flour
1/3 c. sugar
1T. baking powder
1/2 t. salt
1 c. milk
1/4 c. melted butter
1 egg
1 t. vanilla
1/2 c. mini chocolate chips


Grease mini muffin pans. In bowl, combine all ingredients. Bake at 425 for 15-18 minutes.
This made 30 for me.

Pumpkin Apple Muffins

Super Delish! From Taste of Home Halloween Magazine.

2 1/2 c. flour
2 c. sugar
1 T. pumpkin pie spice
1 t. baking soda
1/2 t. salt
2 eggs, lightly beaten
1 c. canned pumpkin
1/2 c. vegetable oil
2 c. finely chopped peeled apples

Topping:
1/2 c. brown sugar
4 T. flour
1/2 t. cinnamon
2 T. softened butter

In a large bowl, combine 1st 5 ingredients. Combine eggs, pumpkin and oil; stir into dry ingredients just until moistened. Fold in apples. Fill greased muffin cups 3/4 full.

For topping: combine sugar, flour and cinnamon. Cut in butter until mixture resembles coarse crumbs. Sprinkle 1 tsp on each muffin.

Bake at 350 for 25-30 minutes or until muffins test done.

Yield: 18 muffins.
