Beer Bread

Hands down the easiest bread you'll ever make.  Any beer works - I typically use a light beer such as coors light or miller lite.

1 12-oz beer at room temp
3 c. self rising flour
3 T. sugar
1/2 stick of  butter, melted

Combine beer, flour, and sugar and mix well with wooden spoon. Pour into greased 9x5x3 inch loaf pan. Pour butter over batter after it's in the pan.  Bake at 375 for 50 minutes.

Buttery Garlic Herb Rolls

Buttery Garlic-Herb Rolls
1/4 c. butter melted
1/2 T. minced garlic
1/2 T. Italian seasoning

12  frozen white dinner roll dough, thawed

Combine 1st 3 ingredients. Roll each half on a lightly floured surface to form 2 inch circles. Brush tops generously with butter mix, reserving 1/4 of mixture to brush on tops at end). Fold each roll in half (buttered side on the inside of fold) and place on greased cookie sheet . Brush with remaining butter mix. Let rolls rise 35-45 minutes until double in size and then Bake at 350 for 12-15 minutes.

Olive Bread

1 loaf of French Bread, sliced in half, lengthwise
8oz. Monterey Jack Cheese, shredded
3/4 c. sliced green olives with pimientos
3/4 c. sliced black olives
3-4 green onions,sliced
1/2 c. Mayo
1 stick of butter, softened

Preheat oven to 350.  Lay bread out on baking sheets.

In mixing bowl, combine remaining ingredients and stir well. Generously spread olive mix onto bread.  Bake for 15-20 minutes.

Sour Cream Cornbread

1 c. self rising cornmeal
1 8-oz. sour cream ( I use light)
1/4 c. butter, melted
1 can cream corn (regular size can)
2 eggs
minced onion (dried or regular)

Mix all.  Put into 8x8 baking dish.  Bake at 350 for 40-45 minutes or until done.

Beer Bread

4 simple ingredients to delicious homemade bread!

3 c. self rising flour
1/2 c. sugar
1 12-oz. beer

Mix all. Dough will be sticky. Place into greased or buttered loaf pan. Bake at 375 for 45-55 minutes. Drizzle with 2T. of melted butter when done.

Cheese Muffins

A copy cat recipe I found of some cheese muffins similar to those served at a well-known Birmingham BBQ place. Needed a little less sugar and a little more cheese, but none the less - very tasty!

4 T butter (no substitutes), melted
1 1/2 c. all purpose flour
2 1/2 t baking powder
1 c sugar
3/4 c milk
1 egg
1 c shredded cheddar cheese

Mix all ingredients together and pour into greased mini-muffin tins. Bake at 400* for 10 minutes.

Cornbread

This was a good recipe I made to go with our white chili the other night. I really liked it.

Southwest Cornbread
1t. baking powder
1/4 t. salt
3/4 c. yellow cornmeal (mine was self rising)
3 T. melted butter
1 can corn, drained
1 small can diced green chiles
1/4 c. sour cream
3 eggs
1/2 c. grated cheddar cheese

mix all. Pour into greased 8x8 dish. Bake at 350 for 20 minutes.

Broccoli Cornbread

8 T. of butter
1 (10-oz.) frozen chopped broccoli, thawed and drained
1/2 c. finely chopped onion
4 large eggs, lightly beaten
3/4 c. (6 oz.) 2% fat small curd cottage cheese
1/2 t. salt
1 (8 1/2) pkg. corn muffin mix

Preheat oven to 400*. Lightly spray 9x13 dish with cooking spray. In mixing bowl, melt butter. Add broccoli, onion, eggs, cottage cheese and salt. Stir in muffin mix. Pour batter into baking dish. Bake for 25 minutes.

Pumpkin Bread

I made this yummy bread for Gracie's 2 super sweet teachers and 1 for Alan's office last Friday for a Halloween Treat. It would be great for Thanksgiving as well. This recipe will make 3 loaves.

Pumpkin Bread (adapted from allrecipes.com)

3 c. canned pumpkin
1 1/2 c. vegetable oil
4 c. sugar
6 eggs
4 3/4 c. all purpose flour
1 1/2 t. baking powder
1 1/2 t. baking soda
1 1/2 t. salt
2 t. pumpkin pie spice

Preheat oven to 350. Grease and flour 3 9x5 loaf pans.
Mix pumpkin, oil, sugar and eggs in a large bowl. In a seperate bowl, combine dry ingredients and add into the pumpkin mix. Divide evenly between the 3 pans. Bake 45-60 minutes. Cool. Lightly dust with powdered sugar if desired.
