Greek Style Pork Tenderloin

Pork tenderloins are a great lean cut of meat full of flavor and makes the perfect amount for our family with no leftovers.  They are usually pretty inexpensive and cook up great on the grill.  You could easily bake this one using the same marinade.



1 lb. pork tenderloin
juice and zest of 2 lemons
1/2 c. olive oil
salt and pepper
1 t. dried oregano
1/2 t. dried thyme
1 t. minced garlic


 Mix marinade and add pork tenderloin.  Let set about 1 hour. 


 Grill until desired doneness.  Let pork rest about 5-7 minutes before slicing



Serve with couscous salad and pita bread and homemade hummus.  Yum!
