Peanut Butter No Bake Cookies

I absolutely love No Bake cookies.  There is a little bakery in our town that makes the most delicious, gooey peanut butter no bake cookies.  I love them and have been searching for the perfect recipe to make them at home.  These were so good.  I think they are better than the original chocolate ones that I think of when I think no bakes.  This recipe made 30 which was perfect.  These package well and would make great bake sale cookies as well.

Peanut Butter No Bakes
1/2 c. butter
1/2 c. milk
2 c. sugar
1/2 c. peanut butter (just the regular stuff, not reduced fat and not all natural)
1 t. vanilla
dash of salt
3 c. quick cook oats
Reese's Pieces (optional)

In large saucepan, add butter, milk and sugar and melt over medium heat.  Once mixture comes to a boil, stir constantly for 2 minutes.  Remove from heat.  Add in peanut butter, vanilla, salt and oats.  Stir to combine.

Drop by tablespoon onto wax paper, parchment paper or foil.  Allow cookies to set up - about 20-30 minutes.
