Hot Chicken Salad

Hot Chicken Salad is basically another form of chicken casserole and we eat lots of chicken casseroles.  It's easy, it's good, and it's pretty quick.

Hot Chicken Salad
1 package of boneless, skinless chicken breasts, cooked and diced
1 c. thinly sliced celery
1 c. cashews (unsalted)
1 onion, finely chopped
1 c. mayo
1 T. fresh lemon juice
1 small jar diced pimientos, drained
Salt and Pepper to taste
2 c. shredded cheddar cheese
1 c. potato chips, crushed (I like Lay's the best or that style)

Preheat oven to 400.

In a large mixing bowl, add chicken and next 9 ingredients.  Place in 2 quart baking dish.  Top with crushed chips.  Bake for 20 minutes or until heated through.
