Mushroom Tart


1 pie crust (either store bought or homemade)

4 T. butter
1/2 onion, finely diced
1 T. minced garlic
2 c. sliced portabello mushrooms
1 c. sliced button mushrooms
2 c. shredded Monterey Jack
1/2 c. shredded cheddar
3/4 c. half and half
2 eggs, beaten
1/4 t. salt
1/4 t. fresh black pepper
1 t. rosemary
1 t. parsley flakes


Preheat oven to 350.

Press dough in 9 inch pie pan. Bake for 15 minutes. Increase oven temp to 375.

In skillet, heat butter over medium heat until butter is melted. Add onions and garlic; cook 2 minutes. Add mushrooms, cook 5 more minutes, stirring frequently. Remove from heat.

In bowl combine cheeses, half and half, eggs, mushroom mix, salt and pepper and rosemary. Pour into prepared crust. Sprinkle with parsley. Bake for 25-30 minutes.
