A copy cat recipe I found of some cheese muffins similar to those served at a well-known Birmingham BBQ place. Needed a little less sugar and a little more cheese, but none the less - very tasty!
4 T butter (no substitutes), melted
1 1/2 c. all purpose flour
2 1/2 t baking powder
1 c sugar
3/4 c milk
1 egg
1 c shredded cheddar cheese
Mix all ingredients together and pour into greased mini-muffin tins. Bake at 400* for 10 minutes.
