Chicken-Olive-Cheddar Quiche

Alan loved. He's an ok quiche fan, but really liked this. Super quick and easy. I had chicken cooked and frozen so just thawed out the night before and mixed up really quick.

1 pie crust (either homemade or store bought). I used store bought.
2 T. butter
1 c. chopped cooked chicken
1/2 bunch of green onions,thinly sliced
1 4-oz jar sliced mushrooms, drained
1 2.25 oz. can of sliced black olives, drained
1 t. minced garlic
1/2 t. ground red pepper
1/2 t. cajun seasoning
1 1/2 c. shredded Cheddar Cheese
1 c. milk
4 eggs
salt and pepper


Place pie crust into 9-inch pie plate. Bake at 400 for 8 minutes. Cool.

In a large skillet, melt butter. Add chicken and next 6 ingredients. Saute 5 minutes and then put into baked pie crust. Top with shredded cheese.

Whisk together milk, eggs and salt and pepper. Pour over chicken mixture. Bake at 400 for 35-40 minutes or until set.

Let stand 10 minutes before serving.
