Easy Lasagna

Easy  - so very, very easy!!  Does not take long to whip up this classic that the whole family will love.  Double it and make another pan for the freezer.


1 15-oz. container of ricotta cheese
2 c. shredded mozzarella cheese, divided
1 c. parmesan cheese, grated, divided
1 egg
1 T. Italian seasoning
salt and pepper
1 lb. ground beef, browned and drained
1 large jar of your favorite tomato sauce
9 Lasagna noodles, cooked and drained

In a mixing bowl, combine ricotta cheese, 1 c. mozzerella, 1/2 c. parmesan cheese, egg and Italian seasoning, salt and pepper.  Set aside.

In skillet, after you have browned your meat, drain off fat and add tomato sauce.  Stir to combine.

In a 9x9 pan, lay out 3 noodles.  Spread with 1/2 cheese mixture, 1/3 sauce mix.  Repeat.  Top with remaining noodles, sauce.  Sprinkle top with remaining 1 c. mozzarella and 1/2 parmesan cheese.  Cover with foil.  Bake at 350 for 30-45 minutes.  Remove foil and switch to broil.  Broil until cheese on top is browned and bubbly.  Let set 10 minutes before cutting.

If freezing, assemble as directed.  Cover with foil and freeze.  Thaw completely before baking.
