Sausage Cheese Grits Casserole

Since we were doing this for "Breakfast for dinner, we added some garlic and peppers. You might want to omit for breakfast.

4 c. water
1/2 t. salt
1 c. quick cooking grits
2 c. shredded cheese
1/4 c. butter
4 eggs, lightly beaten
1/2 c. milk
1 garlic clove, minced
2 whole banana peppers, diced
1 lb. pork sausage, browned and drained.

Grease a 2qt. casserole dish and set aside. In saucepan, bring water and salt to a boil. Add grits, reduce heat to low , cook 5 minutes and stir occasionally.

Remove from heat and stir in 1 1/4 c. cheese and butter; stir until melted. Add eggs, milk, garlic, banana peppers and sausage; blend well. Pour mixture into dish. Sprinkle with remaining cheese
Bake at 350 for 45 min - 1 hour - I will try this in a 9x13 next time to see if I can get the cook time down. Mine would never really set up - still good.
