Cajun Ham and Grits Pie

1 1/4 c. quick cooking grits
2 tsp. cajun seasoning
salt
1 1/4 c. extra sharp cheddar cheese
4 T. butter
1 bunch of green onions, coarsely chopped
1 8oz package white mushrooms, sliced
1 c. coarsely chopped ham
1 can diced tomatoes

1. Preheat Oven to 400. Grease a deep 10 inch pie pan. In a saucepan, bring 4 cups of water to a boil. Stir in grits, 1tsp. of cajun seasoning and 1/2 tsp. salt; cover, lower the heat to low and simmer, stirring occasionally, until cooked about 7 minutes. Remove from heat and stir in1 c. cheddar, 2 T. butter and 1/2 green onions. Pour into prepared pie pan, spread evenly.
2. In large skillet, melt remaining butter over med-high heat. Add mushrooms and remaining scallions and cook, stirring occasionally, for about 5 minutes. Add ham, tomatoes and remaining cajun seasoning. Pour mix over grits. Sprinkle with remaining cheese and bake until heated through and lightly browned 20-25 minutes. Let sit 5 minutes before serving.
